Bacon & Bourbon 2015 VIP: Bourbon and the Barrel

Well over half the flavor in bourbon comes from the charred new oak barrels in which it is aged. Simply stated, this means that the quality and character of every barrel matters. It also means that even the slightest changes to this wooden vessel--its size, where the wood comes from, and how deeply it is charred--can have a dramatic effect on the flavor profile of the bourbon aged inside. Join us for this special seminar as we discover how not all bourbon barrels are created equal. We’ll talk wood management and really dig in to how barrel treatment can define the finished brown spirit. And of course, we’ll be tasting through some great bourbon selections along the way to highlight these points.

Guests will receive full admission to Bacon & Bourbon Session One (1pm-330pm), plus:
One-hour seminar with Astor Center instructor Allen Roth on the importance that oak barrels play in defining the characteristics of bourbon
One welcome cocktail
Three sample pours of bourbon
Palate-cleansing bread and cheese
