Producer Dinner with Chip Tate, Head Distiller and Founder of Balcones Distilling

On Sunday, September 9, at 6pm, Chip Tate, Head Distiller and Founder of Balcones Distilling joins us at dell'anima for a Producer Dinner. Chip will walk you through four courses of dell'anima cuisine expertly paired with his spirits, talking through the history, production, and philosophy of Balcones Distilling. Tickets are $150 per person all inclusive (food, wine and spirits)

Owner and master distiller Chip Tate produces premium, artisanal spirits that are establishing new benchmarks for American whiskey. Founded in 2008, Balcones was the first to produce small-batch, roasted Hopi corn whiskey. Chip and his team continue to innovate, their new distilling and smoking techniques are the genesis of Baby Blue, True Blue, Smoked Brimstone, Rumble and Rumble Cask Reserve. Chip’s attention to detail is legendary; from building his own custom distilling equipment to the hand-dipped wax seal, each bottle represents Chip’s commitment to quality and the evolution of American craft distilling.

Dell'anima was opened by chef Gabe Thompson and Joe Campanale on October 24, 2007 in the heart of New York City's West Village.

Dell'anima means "of the soul" in Italian and the food features hearty, eloquent dishes of thoughtful simplicity. Our menu offerings change daily, and we use local, seasonal, sustainably harvested produce where possible.

Thompson's menu features a selection of pastas made in-house daily, traditional dishes rarely found outside of Italy, and Italian-inspired creations that are of Thompson's own invention.
