Maturation in Bourbon Paradise –Kentucky- can lead to very high proof whiskies: in spite of the legal maximum of barreling the white dog at 125 proof, the final alcoholic strength at the end of maturation, can be all the way up to 170 proof! Depending on the location of the barrel and many other factors, you could be dealing with a very playful drink…high proof means more pleasure anyway! These Bourbons are so rich and filling that you won’t need dinner. But we’ll still serve plenty of delicious bites before the class starts.
