If you value a smooth, well-aged whiskey, then Knappogue Castle 12-year is a dram waiting for you. Standard practice in Ireland is to distill the spirit three times for a seriously smooth drink. Distinctly fruity notes of apple and pear mingle with funky complexity from the still. A citrusy sweet finish of grapefruit and spice firmly stand out. Nothing was filtered from the spirit when it was poured directly from the barrel into the bottle.This whiskey was neither dyed nor blended with others from the run so every ounce of character would be preserved. Light, friendly, and very enjoyable to drink. Sláinte!
