It is indeed an invitation to discover the varying impacts of oak species and cask types, and explore the links between distillery character (resulting from specific fermentation and distillation processes) and maturation style achieved by applying certain wood policies, warehousing methods and blending techniques. How big of a difference is there between an 18 year old and a 21 year old? Is there any value to jumping to the much more expensive 25 year olds? 21 seems to be the sweet spot when affordable luxury is a daily routine…
