A harsh, fiery spirit may have potential in its youth, but may truly shine after a long soak in oak. The softening influence of aging and the integration of flavors that come after a rest in barrel have an undeniable affect on the finished spirit - but how exactly does that process work? And what of fully composed cocktails? Do they have the potential to get even better, or at the very least, more interesting, as they age?

Join spirits expert and James Beard Award-winning author, Dave Wondrich for an exploration of the affect of age (or lack thereof) on spirits and cocktails. We'll taste a range of whiskies, from white dog straight off the stills, to some very well-aged and even over-aged versions as we aim to understand the nature of a spirit's evolution. We've also broken out the barrels and begun aging a classic cocktail in advance; we'll be serving up the fresh version alongside the aged example in order to truly understand the process of maturation.
