Meat and bourbon are on the menu at this four-course pairing dinner, hosted by whiskey mecca Char No. 4. Chef Matt Greco will host visiting toque Michael Paley (of Louisville, KY’s celebrated restaurant Proof on Main) for a collaborative prix fixe: Start with a selection of porkcentric small bites (including Newsom’s ham and pork-jowl terrine), then move onto combinations like smoked duck and foie gras sausage with an Evan Williams single-barrel 2000 vintage.
